  14. Prepare 1 /4 th teaspoon of Salt or to taste.
  15. Prepare 1 teaspoon of Lemon Juice (optional).

  17. You need 1 teaspoon of Mustard sauce.
  18. It's 2 tablespoons of Pasta sauce.
  19. You need 1/4 th cup of shredded reduced fat mozzarella cheese.
  20. Prepare 2 of cheese slices.

Look for focaccia in the bakery, deli or frozen-food section of the grocery store. Using already-shredded mozzarella cheese is certainly easy. In large bowl, mix zucchini, mushrooms, bell pepper, onion, oil, thyme and salt; toss to coat vegetables. Place on grill over medium-high heat.

  6. Add the cheese slices, sprinkle oregano, drizzle 2-3 drops of mustard sauce and lay the lettuce leaf..
  7. Now cover it with the other half on top and press down..
  8. Microwave for 40 seconds so that the cheese melts..
  9. Serve it immediately to your kids and loved ones with a hot cup of coffee..

When the mushrooms and eggplant are out of the oven, slice the eggplant into smaller strips and put one layer of eggplant on one side of the focaccia bread. Put a layer of mushrooms on top of the eggplant, and top it off with some arugula (or any greens). Cover the sandwich with the other half of the focaccia bread. Spread the vegetables out over top the dough leaving some space between the vegetables and pushing them gently into the dough. Transfer to baking rack to cool.
