Made with Pork Carnitas (Mexican Pulled Pork) but you can substitute with any. We suggest lining your slow cooker with a slow-cooker bag so you can easily remove the stack from the cooker. Ingredients of Enchilada Stack
- It's 3-4 of Fajita sized tortillas.
- It's 3 cups of Mexican style shredded cheese.
- It's 1 (10 oz) of can diced tomatoes & green chiles.
- It's 1 (24 oz) of can red enchilada sauce.
- You need 1 lb of ground meat of your choice.

Enchilada Stack step by step
- Preheat oven to 350°..
- Brown meat in skillet, drain if necessary. Season to taste (I use minced onion, salt and pepper)..
- In mixing bowl, combine tomatoes, chiles, 3/4 of enchilada sauce, and meat..
- Cover bottom of 9-inch pie dish with enchilada sauce, place tortilla on top..
- Spoon sauce and meat mixture over tortilla, then sprinkle shredded cheese on top..
- Repeat layers until pie dish is nearly full..
- After your final layer, place one tortilla on top, then spread the rest of your enchilada sauce on it..
- Bake for 30 minutes. I sprinkle more cheese on for the last 10 minutes..
- Dinner is served!.
My local grocery store was handing out this. You could serve each stack as it's finished, if you don't mind people. Although I said that making your own enchilada sauce is optional, I can't bear to make these without my homemade sauce. Another Crockpot freezer meals to feed the family with!
